Jalapeno Baked Chicken

Chicken breast is the staple of any healthy meat eaters diet. It’s lean, it’s cheap, and it’s easy to make. However, it’s also pretty flavorless and dries out easily. So every time I meal prep my chicken, I try my best to make sure it’s as flavorful as possible, but also tender and moist. I don’t always succeed, trust me, but when I do, I try my best to remember the recipe for future meal preps. And so I present to you, my Jalapeño Baked Chicken!

Jalapeno Baked Chicken

This chicken is pretty spicy, so it’s not really for the faint of heart. However, if you don’t like a lot of spice, you can dilute the brine by adding more water than you do jalapeño vinegar, and you’re pretty much good to go. The chicken takes a little longer to make than most of my other recipes, but if done right it tastes great with some rice or pasta (or some delicious Old Bay fries). Let me know how it turns out!

Jalapeno Baked Chicken

Jalapeño Baked Chicken 


Yield Amount: 5 servings Brine Time: 30 minutes – 8 hours Prep Time: 5 minutes
Cook Time: 40 minutes


Ingredients

Brine

1 lb Chicken breast – thin sliced into 5 pieces
1 cup Pickled jalapeño vinegar (if you want less spicy, reduce to 1/2 cup)
1 cup Water (if you want less spicy, increase to 1.5 cups)
1 tsp Sugar (I used coconut sugar)
2 Cloves garlic, crushed and chopped

Baked Chicken

Brined chicken from above
1 tsp Olive oil
1 tsp Paprika
1 tsp Cayenne
2 tsp Black pepper
1/2 tsp Anisette sugar (or regular sugar if you don’t have this)


Instructions

Brine

  1. Add water and jalapeño vinegar (a few jalapenos as well if you’d like) into a large mixing bowl and stir
  2. Add garlic and sugar – stir until the sugar is dissolved
  3. Add the chicken into the bowl, stir a little
  4. Cover bowl with saran wrap and place in fridge. You can brine for as long as you’d like (but minimum 30 minutes), I typically do 4-5 hours

Baked Chicken

  1. Preheat oven to 400 degrees
  2. Add paprika, cayenne, black pepper, and anisette sugar into a small bowl and mix together
  3. Coat baking sheet with  very thin layer of olive oil
  4. Lay chicken on sheet (make sure to save the brine!)
  5. Sprinkle chicken with the spice mix (don’t use more than half)
  6. Drizzle chicken with olive oil and place in oven for 20 minutes
  7. Remove chicken from oven and flip
  8. Pour about 1 tsp of the brine onto each piece of chicken
  9. Sprinkle chicken with spice mix and place back in oven
  10. Let bake for additional 20 minutes
  11. Remove chicken, take a picture, tag @Pizza_and_Perrier
  12. Sprinkle with some lemon juice and enjoy!
